Description

Fresh wild chanterelles (Cantharellus cibarius), also known as girolles, hand-picked in the forests of the Ukrainian Carpathians during the harvest season. Instantly recognisable by their golden-yellow, trumpet-like shape and fruity, apricot-like aroma with a gentle peppery finish, chanterelles are one of the most sought-after wild mushrooms in European kitchens. Like all true wild mushrooms they cannot be cultivated, so supply follows the season. A key advantage over softer species: chanterelles are firm and resilient, holding their shape and texture in the pan without turning slimy — which is exactly why chefs prize them for whole, visible plating. Foraged and moved into the cold chain within hours, they are hand-cleaned and graded by size, from small premium girolles for fine dining to larger grades for general kitchen use and processing. This is a seasonal, perishable product supplied on short lead times with chilled logistics. Typical applications: restaurants and fine dining, fresh retail and specialist grocers, and processors making their own frozen or preserved chanterelles. All mushrooms are hand-cleaned, sorted and checked for foreign matter. Sourcing is traceable from forest to dispatch, and handling follows HACCP standards.
