Description
Dried wild chanterelles (Cantharellus cibarius), also known as girolles, hand-picked in the forests of the Ukrainian Carpathians and gently dried to preserve their distinctive character. Drying keeps the chanterelle's golden colour and its fruity, apricot-like aroma with a peppery note, concentrating them into a compact, shelf-stable form that needs no cold chain and travels efficiently. Unlike porcini, dried chanterelles firm up considerably and rehydrate to a pleasantly chewy bite, so they suit longer-cooked dishes — and they excel when milled into powder, where their aroma is released fully into stocks, sauces and seasonings. Graded to specification: whole dried caps for visible presentation and premium retail; broken pieces for the food industry; and milled powder as a natural mushroom seasoning base. Because dried mushrooms are highly concentrated, a small quantity delivers strong colour and aroma, making them cost-efficient at scale. Typical applications: soups, sauces, stocks and slow-cooked dishes, mushroom powders and seasoning blends, risotto and rice mixes, fillings and pâtés, and premium retail packs.
