Description
Dried wild porcini mushrooms (Boletus edulis), also known as ceps, hand-picked in the forests of the Ukrainian Carpathians and carefully dried to concentrate their character. Drying does more than preserve — it deepens the mushroom's flavour, intensifying the nutty, savoury umami that makes porcini so valued as a natural flavour base. With moisture reduced to a stable level, the product is fully shelf-stable at ambient temperature and needs no cold chain, which simplifies storage and cuts freight cost per kilo of flavour compared with fresh or frozen. Porcini are graded to specification: premium whole slices with pale, intact flesh for retail and fine dining; broken pieces for the food industry; and milled powder for stocks, sauces, seasonings and ready meals. Because dried porcini is highly concentrated, a small quantity delivers strong flavour, making it a cost-efficient ingredient at scale. Typical applications: soups, sauces, stocks and risotto, seasoning blends and rubs, fillings and pâtés, and premium retail packs. All mushrooms are cleaned, sorted and free of foreign matter.
