Harvest Calendar for Ukraine: When Berries, Mushrooms & Fruit Ripen
For an industrial buyer, seasonality is the basis of planning. This calendar shows the average harvest windows for the main crops in Ukraine and explains how they affect your purchasing.

Knowing when each crop ripens lets you order at peak quality, lock in pricing before demand spikes, and avoid running short of raw material mid-production. Below are the average harvest windows for the main crops in Ukraine, and how to use this calendar to plan your purchasing.
Why the harvest window matters even for frozen product
It would seem IQF freezing removes the question of seasonality — the product is available year-round from stock. But the quality of a frozen batch is set at the moment of harvest: a berry frozen at peak ripeness keeps its colour, flavour and nutrients; one picked off-peak does not. Knowing the harvest calendar means knowing which batch will be best — and when to reserve it before the fresh crop is taken. On top of that, each season's volume is capped by the yield: contract early and you get a better price and guaranteed quantity; contract late and you take what's left.
Summer — peak berry season
The most intensive period. Most wild and cultivated berries are harvested in summer. This is the window when quality and availability are highest — and when it's worth reserving volumes a year ahead.
- Strawberries — June–July
- Wild bilberries — June–August
- Raspberries — July–August
- Blackcurrants — July
- Sour cherries — July
- Elderberries — August
Late summer to early autumn: lingonberries, mushrooms, late fruit
Late fruit ripens and the mushroom season begins. Wild mushrooms are the most weather-dependent category: yields swing year to year, so early contact matters most here.
- Apricots — July–August
- Lingonberries — August–September
- Plums — August–September
- Aronia — September
- Porcini — peak August–September
- Chanterelles — summer–autumn
- Honey mushrooms — September–November
Autumn — late berries
The last lines of the season, which gain value after the first frosts.
- Rose hips — September–October
How to use this calendar for purchasing
Plan orders around the harvest season, not the moment of need: contract summer berries in spring, autumn mushrooms in summer. Reserve scarce lines early — wild bilberries, porcini and chanterelles have limited, weather-dependent yields and are taken first. Confirm availability per product — we provide current harvest windows and remaining stock for each line to support your planning.
